Banana and Almond Pudding

This recipe is so easy and could work for either breakfast or dessert. Almonds are a great source of protein and the almond milk adds additional nutty flavour. This is an easy (and delicious!) way to include nuts in meals for your baby or toddler.

Remember however that whole nuts should only be introduced to your child from three years old to prevent choking. If you have nut allergies in the family, first consult  your paediatrician or nurse before trying any nut-containing recipes.

What you’ll need*:

  • 3 ripe bananas (the riper, the better)
  • 2 x 150ml punnet full fat Greek yoghurt
  • 1 x packet flaked almonds
  • 3 x Tbs unsweetened almond milk
  • 1 tsp vanilla essence
  • 1/2 tsp cinnamon

Blitz the almonds until finely ground in a food processor. Add all of the remaining ingredients and process until smooth (there will be a granular texture because of the ground nuts).

Divide into single-serving containers and freeze.

To use from frozen, take out a portion from the freezer and leave it in the fridge overnight to thaw.

Stir before serving.

*Makes 8-10 portions

NOTE: The above may need to be adapted if your child has an allergy to any of the mentioned ingredients.
